There's a push nationwide to adopt more humane and sustainable eating habits that are better for the planet. People are calling for consumption of fair trade coffee and chocolate where proceeds go to the actual growers or eating organic fruits and vegetables that cause fewer chemicals sprayed in the growing process.
 
In Living Well: College prof hopes the cafeteria will serve a lesson in ethics, a writer discuss food ethics and a conference that called professors, corporate leaders and community sponsors together to discuss changing university cafeteria's menus. Where we might see just a university cafeteria, Peter Singer sees an opportunity, state the article, written by Bob Condor and available at www.seattlepi.com.
 
The professor states in the article that "a large number of universities, or about 60 to 80" have switched to eggs from cage-free hens only. He sees it as a small but important step. The next question: Can universities, Princeton included, actually serve an "ethical hamburger?" It would reduce mistreatment of cows as a starting point. Add less pesticide and antibiotics as other benchmarks.
 
He says that university cafeterias are the place to begin this work because it's where young adults are on their own and start making important life choices about their priorities. So is it time to clean up our menus, at home and in public places, to make a difference?
